Baked ribs are such a simple and economical dish that they are perfect for those days when we don’t feel like cooking much. Just a good seasoning and some time in the oven is all it takes to turn that piece of meat into an exquisite bite that you’ll want to roll up your sleeves for and enjoy, even without making a barbecue sauce. It’s a dish that deserves a place in our easy oven recipes, with almost no mess.
This time, I chose Iberian pork ribs, which have a higher fat content, making them juicier. However, if you prefer to consume less fat, you can opt for a leaner cut from white pork.
In addition, this recipe lends itself to making barbecue ribs or preparing something heartier like baked ribs with potatoes. You can also make marinated ribs with potatoes, or even prepare a sauce to finish it off with baked ribs and a honey mustard vinaigrette.

- 100 g of garlic
- 1 tablespoon sweet paprika
- Dried oregano
- Ground black pepper
- 200 ml extra virgin olive oil
- 100 ml white wine (or beer)
- Coarse salt

We will start by crushing the garlic in a mortar, or if you prefer a finer texture, you can use a blender. Add the paprika, oregano, and pepper. Pour in the olive oil and mix everything well. Brush the pork ribs on all sides with the marinade, then cover and let them sit in the fridge for two hours.
Preheat the oven to 190°C, using heat from both the top and bottom. Place the meat in a baking dish and season with salt. Bake for half an hour, then add the white wine and continue baking for another half hour or until the meat easily separates from the bone.
What to Serve with Baked Ribs
These baked ribs are so flavorful that they will almost make you forget those prepared on the barbecue. Serve them with a salad, some fries, or a vegetable soup, along with a cold beer, and enjoy your summer meals.
