this is one of my favorite food I can eat a whole crab by myself, it is really delicious and crispy.
For 4 pieces of soft shell crab, you need the next ingredients :
- A quantity of oil for frying about one quart.
- Half cup of milk
- One big egg
- One cup of flour, use all purpose flour
- Pepper and salt to taste
Step number one
Peeling the crab by lifting the one pointed part of the top of the crab, take off the tail and clean with scissors the rest of the crab. Wash the peeled crabs with cold water and dry them out on paper towel.
Step number two
Put oil on fire make sure to use a deep frying pan, on 180C (365 F).
Step number three
Mix egg and a half cup of milk, and in another bowl add flour with salt and black pepper. You need to put salt on crabs before frying, and coat each crab with flour, remove any excess then dip it out in the mixture of milk and egg, finally repeat the process one more time, to make sure all the sides of the crab are full of the ingredients and to get the best crunch in the end.
Step number four
If your pan is small cook each one alone, but if it is wide cook two by two. Be careful when putting the crabs in hot oil, it takes about one to two minutes for each side, until you can see the beautiful golden color, as a last step dry out the crabs on paper towel.
