Ingredients for Crispy Chicken Wings:

  • 20 chicken wings
  • 200 grams of flour
  • 100 grams of breadcrumbs
  • 200 milliliters of water
  • 2 teaspoons of sweet paprika
  • 2 teaspoons of curry
  • 1 teaspoon of black pepper
  • 1 teaspoon of thyme
  • 1 teaspoon of oregano
  • 1 teaspoon of ground chili
  • 2 teaspoons of salt

Curry Mayonnaise:

  • 100 milliliters of mayonnaise
  • 1 tablespoon of curry
  • 1 garlic clove
  • 1 teaspoon of mustard
  • 2 tablespoons of vinegar
  • ½ lemon (juice)
  • A pinch of salt

Chive Mayonnaise:

  • A pinch of salt and pepper
  • 100 milliliters of mayonnaise
  • 3 tablespoons of finely chopped chives
  • ½ lemon (juice)

Instructions:

  1. Prepare all the ingredients.
  2. Mix the flour with sweet paprika, curry, black pepper, thyme, oregano, ground chili, and salt. Set aside 50 grams of this mixture for breading later.
  3. Gradually add water to the mixture. You need a thick but liquid consistency. Remove the skin from the wings, wash them thoroughly, and marinate them in the mixture for at least 1 hour in the fridge.
  4. Bake the wings in a preheated oven for about 30 minutes. This step ensures the wings are partially cooked, as frying them directly may leave them undercooked.
  5. Remove from the oven and let cool slightly. Meanwhile, mix the breadcrumbs with the 50 grams of seasoned flour that was set aside, and begin breading each wing one by one using a pair of forks.
  6. Fry the wings in hot oil. Since they are already partially cooked, fry them briefly until golden and crispy.
  7. Once done, place them on a tray lined with absorbent paper to remove excess oil.
  8. For the curry sauce: combine all ingredients until you get a smooth mixture. Add the garlic only peeled and crushed to enhance the flavor.
  9. For the chive mayonnaise: finely chop the chives, mix all ingredients, and it’s ready.
  10. Serve the crispy chicken wings with the sauces and enjoy! You can also accompany them with Indian tomato sauce, garlic sauce, or teriyaki sauce.
