Ingredients:
- 2 slices of light bread (white, wheat, or Brioche)
- 2 eggs, fried and seasoned to taste
- 3 to 4 pieces of thick-cut bacon, uncured turkey bacon, or plant-based bacon
- 2-4 slices of cheddar cheese
- 1 tablespoon of butter or mayo for melting and toasting bread
- 1 teaspoon of mayonnaise (optional) for sandwich condiment
Instructions:
- Place 3 to 4 slices of bacon in the air fryer set to high heat, approximately 350-375°F (175-190°C).
- Spread a thin layer of butter/mayonnaise on one side of two slices of bread. Alternatively, you can do this step after air frying, using a skillet, for a buttery, golden brown toast.
- Quick note: If you prefer mayonnaise as a condiment, you can also spread it on the underside of the sandwich bread.
- Cook the bacon for about 3-6 minutes or until it reaches your desired crispiness, then set it aside.
- Fry two eggs in a skillet and shape them to fit the size of the sandwich bread or fold them over. Flip the eggs halfway through cooking to ensure both sides are cooked evenly, or fry the eggs in the air fryer (see instructions). I prefer the skillet method.
- Place a slice of cheese on one slice of bread, then transfer the fried egg onto the bread. Place an additional slice of cheese over the egg.
- Next, add the air-fried crispy bacon on top of the cheese-covered egg.
- Place the remaining slices of cheese on top of the bacon, then cover with the other slice of bread to complete the sandwich.
- Finally, place the breakfast sandwich in the air fryer for approximately one to two minutes to toast it until it's nice, warm, and crispy.
- Remove the sandwich from the air fryer. You have the option to melt butter or mayo in a skillet over medium heat, then toast the sandwich on both sides until it turns golden brown.

Notes:
- Air fryer times and temperatures may vary.
- If you're feeling fancy, you can use avocado instead of mayonnaise as a condiment, but don't use it for toasting the sandwich.
- Applegate Uncured Turkey Bacon is highly recommended.
- Fakin' Bacon – Smoky Tempeh works well on this sandwich with vegan mayo. Hellmann's Vegan Mayo has a delicious flavor that can fool anyone!
- For a plant-forward option, use your favorite vegan cheddar cheese.
